The restaurant, located on Pyatnitskaya, was one of the first in Russia to bring conscious-consumption and waste-recycling practices into the restaurant business. The restaurant sorts every kind of waste, including soft plastic, receipts and foil packaging. In 2021, Björn received two honors from the Michelin Guide at once: a "Bib Gourmand" for best value, and a "Green Star" for a sustainable, eco-conscious approach to cooking.

Björn in Moscow is a gastronomic space combining the philosophy of New Nordic cuisine with a zero-waste approach.

The restaurant's interior is done in a Scandinavian-minimalist spirit: natural materials, clean forms, light tones and restrained decorative touches. Wood and stone dominate the room, the walls carry silhouettes of northern animals made from branches, and the windowsills hold live moss and stones.

The menu is built on the principles of Nordic cuisine: local seasonal ingredients, pronounced natural flavor, and minimalism in plating. Among the dishes: reindeer tartare with soaked lingonberry and fried reindeer moss, game — wild boar and roe deer with cherry — juniper-charred duck, and a Finnish creamy soup with salmon, braised sockeye salmon and a skyr-cheese marshmallow. The bar list includes cocktails with formic acid, birch sap, pine-needle infusions, and original combinations with gin, nuts, tea and northern berries.
